Waking up in the middle of the night with a low blood sugar can be the worst, but I’m thankful that I am able to wake up to take care of it. Glucose saves lives. Just means I need to lighten up on my insulin units especially on those days after a long workout. Or take none at all if my numbers are still in good range. Using no fast acting nor slow acting insulin is my main goal while still maintaing a good blood sugar range naturally.

The BEST invention for making “pasta!” The Spiralizer!

This is the easiest machine to magically make veggies into spaghetti! It’s super easy and so quick! Just use any veggie you like, I used zucchini and cucumber. Then after spiraling it into pasta strands, dump whatever sauce you would like to mix in!🍴 I used a delicious spicy curry sauce. But you can add any kind of sauce! Be creative! This meal also doesn’t affect my blood sugar so no insulin was needed to eat.

We also made our own sweet potato fries by spiraling a sweet potato, putting them on a pan, then a drizzle of olive oil and then baked them for 10 minutes! So fast and easy!
