Dining out can be challenging, especially when you follow a healthy eating lifestyle. But making simple changes to an order can easily done. When ordering say to hold the bread and use lettuce wraps instead or no side of potatoes but extra veggies instead. At sushi restaurants look for sushi rolls that offer no rice! It’s so delicious and you get more flavor! This is a crab, salmon, avocado, cucumber roll with no rice! Beware of the sauces though, ask to put it on the side

Diabetics and the Chocolate Factory

Ever having a major chocolate craving?! I have found a fast simple way to make your own cacao chocolates and truffles! And it’s all sugar free and super low carb! I know, I didn’t think it was possible either! Cacao is an amazing raw superfood that naturally raises energy, provides antioxidants, essential vitamins and minerals, enhances weightloss, and improves mood. (Don’t get confused with Cocoa, that’s the already processed sugary kind of chocolate, you don’t want that) This snack also works as a post workout recovery snack too because it has a great source of protein, potassium, and magnesium! Enjoy fellow chocoholics! And just a little simple reminder of the difference between Cacao vs. Cocoa as you are grocery shopping and cooking:

Ingredients:

Instructions:

Put a few spoonfuls of coconut butter into a bowl, and add about 2 spoonfuls of cacao powder to the mix (depending on how chocolatey you want it). Then add sugar free honey and stevia to it to give it that sweeter taste. Add however much sweetness you want to flavor it to your taste. Then roll the chocolate paste into a couple marble sized balls. Then just stick them into the freezer for a few minutes and BAM! You got yourself some instant yummy chocolates to eat. I sprinkled mine with cinnamon to give it another flavor. But you can add what ever you want into it to give it a different taste! Try mixing in coconut flakes, or almonds, or a little bit of raspberry, or cacao nibs, or perhaps add some cayenne pepper to give it a little spice. Be creative and have fun!

My morning literature.

Many people ask me about what inspired my lifestyle and what books they can read. I owe it to these 2 books here. Grain Brain
and Wheat Belly. These books embody my beliefs on food and have amazing insight to how food affects us everyday, even if we don’t see it happening. It has scientific explanations about how sugar, wheat, and carbs can secretly reck your body (diabetic or not). It embraces the Paleo lifestyle and teaches you how to ease yourself into it (including food lists of what to eat which is every helpful). I’m all about that sugar free, carb free, wheat free, grain free, dairy free, gluten free lifestyle! Woot! I have received amazing results from switching to all paleo.. my energy level back to 100%, I feel great during workouts, I keep my body weight how I like it, my blood sugar levels are in good ranges (even without insulin), I sleep better, and I feel like I even save money because I’m not buying a lot of foods that most people would normally get at the store (like candies, chips, cookies, etc). They are great reads and I recommend them to everyone. It’s not just for diabetics, it’s for everyone and everyone would benefit from this lifestyle.and Wheat Belly. Tonight’s home cooked meal with an ocean view. Life is divine! Salmon with lemon and a balsamic vinaigrette salad. Salmon has some amazing benefits to the body. It is a natural anti-inflammatory which helps with any kind of joint pains. It is full of amazing GOOD fats such as Omega-3 fatty acid DHA, which is crucial   for healthy brain functions. It can also help with improving vision and even sleep too. Salmon can prevent depression, heart attack, high blood pressure, high triglycerides, stroke, and arrhythmia. You can get one days worth of Vitamin D within one piece of salmon. A deficiency of Vitamin D has actually been found to be linked to an increase risk of Type 1 Diabetes, so it can be very important (for non-diabetics as well) to keep up with your vitamin intake.

A Whole New World

The BEST invention for making “pasta!” The Spiralizer!

This is the easiest machine to magically make veggies into spaghetti! It’s super easy and so quick! Just use any veggie you like, I used zucchini and cucumber. Then after spiraling it into pasta strands, dump whatever sauce you would like to mix in!🍴 I used a delicious spicy curry sauce. But you can add any kind of sauce! Be creative! This meal also doesn’t affect my blood sugar so no insulin was needed to eat.

We also made our own sweet potato fries by spiraling a sweet potato, putting them on a pan, then a drizzle of olive oil and then baked them for 10 minutes! So fast and easy!
