Paleo Dark Chocolate Peppermint Ice Cream Cookie Sandwiches

When I think food for the holidays, I think of chocolate and peppermint! (Gingerbread too, but I already made some yummy Gingerbread Men in my Day 12 post). For today’s Foody Friday I wanted to create something that incorporates all of those delicious ingredients! Day 19 of the Type Happy Holiday Challenge let’s make the perfect chocolatey pepperminty holiday treat! I’m making Paleo Dark Chocolate Peppermint Ice Cream Cookie Sandwiches! The cookies themselves are delicious, but I wanted to add a little something extra by using my own ice cream that I have at home to fill the middle. My favorite ice cream for this is Arctic Zero’s Vanilla Maple. With only 36 calories, 5g net carbs, 5g sugars, and 3g protein for 1/2 cup serving size.. this is the best low carb, low calorie, low sugar ice cream that I could get my hands on and it is super good and the come in all kinds of flavors. Make your own cookies with any ice cream flavor filling that you want!

Ingredients:

1/4 cup coconut flour
1/3 cup cacao powder
1/4 tsp salt
1/2 tsp vanilla extract
3 tbsp maple syrup
1/4 cup water
3 eggs
1/4 tsp peppermint extract

Directions:

  1. Preheat oven at 350 degrees
  2. Combine all of the cookie ingredients together and mix thoroughly
  3. Pour mixture into muffin pan (about 1-2 spoonfuls into each muffin cup or 1/3 full). Make sure to cover each muffin cup with non-stick baking spray so that the cookies will easily removed
  4. Bake for 10 minutes
  5. Remove and let cool (best way to easily remove them is by tipping the pan upside down and the cookies will fall out)
